The Qualitative and Quantitative Analysis of Sugars and Erythritol by LC-ELSD in Energy/Vitamin Drinks

چکیده
With the abundance of energy/ vitamin drinks to choose from, combined with an emphasis on lower calories, more and more individuals are focusing on their daily sugar intake before consuming these drinks. With this consideration, this application highlights both the LC separation of various sugars and erythritol (sugar alcohol) as well as the analysis of these components in a selection of three energy/vitamin drinks. As both sugars and sugar alcohols are inherently poor UV absorbers, refractive index (RI) has historically been the detector of choice for these compounds. However, when using an RI detector, scientists are limited by both sensitivity and the fact that it cannot be used with any solvent gradients. By comparison, when using an Evaporative Light Scattering Detector (ELSD) for detection, researchers are afforded both greater sensitivity and the ability to run solvent gradients. This application takes particular advantage of the ELSD’s solvent gradient flexibility. As the seven sugars and sugar alcohol to be analyzed have widely differing column retention, a solvent gradient was targeted to provide the optimal separation in the least amount of time. Simultaneous determination of rhamnose, xylitol, arabitol, fructose, glucose, inositol, sucrose, maltose in jujube (Zizyphus jujube Mill.) extract: comparison of HPLC-ELSD, LC-ESI-MS/MS and GC-MS.
BACKGROUND Jujube extract is commonly used as a food additive and flavoring. The sensory properties of the extract, especially sweetness, are a critical factor determining the product quality and therefore affecting consumer acceptability. Small molecular carbohydrates make major contribution to the sweetness of the jujube extract, and their types and contents in the extract have direct influen...

With an emphasis on decreasing calorie intake, more and more individuals are focusing on lowering their sugar consumption from foods and beverages. In response to this, food/beverage manufacturers are now introducing the highly touted sugar substitute rebaudioside A (Reb A), in place of all or most of the sugar in certain foods and beverages. The primary interest in Reb A is the fact that it is...

Background: Caffeinated energy drinks are common drinks among athletes and general population that have benefits such as providing quick energy, reducing fatigue and creating alertness, but can lead to serious complications in patients, especially those who have cancer and mental, cardiovascular, or renal diseases. The aim of this study was to validate the quantitative analysis and determine ca...
متن کاملSurface Evaluation of Resin Zein Films Containing Sugar Plasticizers by Permeability and Atomic Force Microscopy Analysis
Zein is one of the best biopolymer for edible film making and sugars are natural plasticizers for biopolymers. In this research, sugars (fructose, galactose and glucose) at three levels (0.5, 0.7, 1 g/g of zein) were used as plasticizers for zein protein films and their water vapor permeability (WVP), oxygen permeability (OP) and atomic force microscopy (AFM) topography were studied. The p...
